Novelda: Local Cuisine

Novelda’s cuisine reflects the agricultural richness of the region, combining Mediterranean flavors with traditional Spanish dishes. One of the city’s signature dishes is “gazpacho manchego,” a hearty stew made with game meat, flatbread, and a variety of local herbs. Another popular dish is “arroz con conejo y caracoles” (rice with rabbit and snails), which showcases the region’s love for rice-based dishes, common throughout Valencia.

The local vineyards produce exceptional wines, particularly white wines made from the Muscatel grape, which pair perfectly with the region’s fresh seafood and vegetable-based dishes. Novelda’s connection to saffron means that many of its dishes, including paellas, are infused with the rich flavors of this prized spice.

Visitors should also explore the city’s lively food markets, where they can sample local cheeses, olives, and artisanal breads. For a sweet treat, “turrón de Jijona,” a nougat made with almonds and honey, is a local delicacy not to be missed.
